Asparagus Validated
I've always thought the fat asparagus was more tender & tasted better than the "pencil thin" ones. Well, Jacques Pépin has not only validated that, and explained why, but also shown how to be able to use More of the stalks! And the asparagus custards looked so good that, since I was fortunate enough to have some asparagus in my fridge, I made it right away. 'Twas very good.
