Jacques Pepin Fast Food My Way: Under the Sea

Great classics and fine technique
Great video of Jacques. I've improved my cooking techniques thanks to his guidance. Occasionally he mentions his experiences with Julia and work at Howard Johnson, a nice reference from the past.

seafood
It is always interesting to see how different seafood can be prepared. I can see a different way to prepare the seafood iam familiar with

Who'd'a Thunk?
Egg & Tomato Gratin! I almost didnt watch it...what I would have missed. :o/. Not only did it turn out to look interesting, but I even made it, and it was so quick, easy, and Wonderful.

Arborio Rice with Onions & Mushrooms: many interesting comments on both rice cooking methods, and mushrooms in general. Turns put much like a risotto, but much easier.

The Diver Scallops Stuffed with a sort of pesto made me realize there would be no end of possibilites for stuffing. Something I can do over & over without "repeating" the menu. These are served on a bed of the rice.

His mother's Cream Salad is a must try...tonight!

Caramelized Pineapple Spears have given me a multitude of ideas, as well. Not just for dessert!
